Peruvian Mayar microlot aged in local bourbon barrels. Barrel aging coffee is a fun way of integrating local products into the processing of coffee. Green coffee beans are porous and as such will absorb the flavors around them. The beans are added to freshly dumped barrels and aged for about 3 months to absorb the bourbon flavor. The final cup is bourbon forward with the chocolate note from the coffee balancing out the bourbon.
